Veggie Noodle Bowls

I know, you can’t even see the noodles in my picture because of all the toppings I added to mine, but I just couldn’t resist! Sadly we were out of herbs but cilantro or basil on top of this would have been stellar. Here is the recipe- you can cut way back on the oil- omitting it entirely in the dressing, and using probably a quarter of what is suggested for the sauce and for sautéing the tofu. Also- these sites are so cluttered with ads, it drives me crazy. If you quickly click to the print version of the recipe, you can look at it all cleanly without ads popping up left and right!

I also did something profound this past weekend- I cut up a mango FOR MYSELF. I would love to survey other mothers to see how many ever cut up a mango for themselves. My kids have always loved mango so much that I have put in the labor of cutting them up and giving them all the fruit (and my husband always gets the pit!). But on Saturday I used up the last of some yogurt we had, toasted up some coconut shreds and almond slivers, and then added in blueberries and mango just for me!
